What's for dinner?
Okay- so I know you all have been at the edge of your seats right? Yes, shocking, but I cooked AGAIN this evening. This was SO- easy. AND super delicious too.



*My notes below the recipe*


Black Bean and Corn Quesadillas (Says serves 4, but probably more like 2-3)

INGREDIENTS
1 teaspoon olive oil
1 tablespoon and 1-1/2 teaspoons finely chopped onion
1/2 (15.5 ounce) can black beans, drained and rinsed
1/2 (10 ounce) can whole kernel corn, drained
1-1/2 teaspoons brown sugar
2 tablespoons salsa
1/8 teaspoon red pepper flakes
1 tablespoon butter, divided
4 (8 inch) flour tortillas
3/4 cup shredded Monterey Jack cheese, divided

DIRECTIONS
Heat oil in a large saucepan over medium heat. Stir in onion, and cook until softened, about 2 minutes. Stir in beans and corn, then add sugar, salsa, and pepper flakes; mix well. Cook until heated through, about 3 minutes.
Melt 2 teaspoons of the butter in a large skillet over medium heat. Place a tortilla in the skillet, sprinkle evenly with cheese, then top with some of the bean mixture. Place another tortilla on top, cook until golden, then flip and cook on the other side. Repeat with remaining tortillas and filling.


Okay- so I didn't measure things. I normally ALWAYS do, but today I stepped out of my comfort zone. I 'eyed' it, so - satee' the onions in some olive oil (chopped onion), throw in corn and beans, a large pinch of brown sugar, a couple spoons of salsa and some red pepper. Heat it up, put it in an appropriately sized bowl. Heat up some butter, throw in your flour tortilla, shred or place thin Monteray Jack on top, add mixture, add another flour tortilla to the top, spread butter on the top. FLIP, crisp other side and enjoy!

Makena loved it, and I loved it. Enjoy

What's for dinner?
Okay- so now that the kitchen is slowly getting back into a state of use... I set our menu for the next two weeks and started with a couple new recipes. Anyone that knows me, knows I don't cook. Sadly Makena eats lots of Kraft Mac & Cheese, Noodles w/ Italian dressing (Her favorite) and Lean Cuisine frozen meals. I know I suck - but I wasn't born w/ the cooking gene. Plus I hate to clean up. Anything with more than a couple ingredients is too confusing when you're trying to take care of a 6yr old, do laundry, empty the dishes and anything else that is required after work. ANYWAYSSSS.... So, cooked something new. Even though I like to try and stay away from tons of processed foods (though you wouldn't guess from my previous list of food) - I LOVE Salmon. We're fortunate Makena likes all things good too (Salmon, Steak, Lobster--- we're rearing her to be an expensive date as she grows up!). So, I tried a new recipe this evening. I aim for 30 minute meals on weeknights.

Lemongrass and Citrus Poached Salmon
(Serves 4)

INGREDIENTS:
1 pound salmon fillet
1-1/2 cups and 2 tablespoons chicken stock
1-1/2 cups and 2 tablespoons orange juice
3/4 cup and 2 teaspoons white wine
3/8 small yellow onion, chopped
2-1/2 teaspoons minced garlic
3/4 cup and 2 teaspoons chopped lemon grass
1/2 teaspoon salt
1/2 teaspoon white pepper

DIRECTIONS
Remove skin from salmon, then cut into desired portions. (I didn't remove the skin)
In a large pot, combine chicken stock, orange juice, white wine, onion, garlic and lemon grass. Season with salt and white pepper. Bring to a boil for 5 minutes. Reduce heat to a low boil. Place the salmon in the poaching liquid until flaky and tender, about 5 minutes. (took me A LOT longer than 5 minutes, depends on how thick the salmon is)

Wine TIp
Try with a California Sauvignon Blanc .


So, Makena wasn't a big fan of this. Normally she can easily pack down at least 1/2lb of salmon + pasta. I don't care for wine either, and you could taste it slightly in this. Anyways- it was a decent recipe, though I'm a creature of habit. I like to steam my salmon for 20 minutes in the steamer w/ onion slices strewn over it. On the top rack of the steamer I like to put thick slices of zucchini and/or squash. It's simple, easy and w/ a little salt/pepper a REALLY healthy meal.

So, today I tried something different. I have to look at the list for tomorrow's dinner. Check back to see, "What's for dinner at our house?"

Rooney from CBS 60 Minutes. The last line is brilliant.....

As I grow in age, I value women who are over 30 most of all. Here are just a few reasons why:

A woman over 30 will never wake you in the middle of the night to ask,
"What are you thinking?" She doesn't care what you think.
If a woman over 30 doesn't want to watch the game, she doesn't sit around
whining about it. She does something she wants to do. And, it's usually
something more interesting.

A woman over 30 knows herself well enough to be assured in who she is, what
she is, what she wants and from whom. Few women past the age of 30 give a
damn what you might think about her or what she's doing.

Women over 30 are dignified. They seldom have a scream ing match with you
at the opera or in the middle of an expensive restaurant. Of course, if you
deserve it, they won't hesitate to shoot you, if they think they can get

Women get psychic as they age. You never have to confess your sins to a
woman over 30. They always know.


A woman over 30 looks good wearing bright red lipstick. This is not true of
younger women.


Once you get past a wrinkle or two, a woman over 30 is far sexier than her
younger counterpart.


Older women are forthright and honest. They'll tell you right off if you
are a jerk if you are acting like one! You don't ever have to wonder where you
stand with her.

Yes, we praise women over 30 for a multitude of reasons.
Unfortunately, it's not reciprocal. For every stunning, smart,
well-coiffed hot woman of 30+, there is a bald, paunchy relic in yellow
pants making a fool of himself with some 22-year-old waitress.

Ladies, I apologize. For all those men who say, "Why buy the cow when you
can get the milk for free". Here's an update for you. Nowadays 80% of women
are against marriage, why? Because women realize it's not worth buying an
entire Pig, just to get a little sausage.

Hell Explained
HELL EXPLAINED BY CHEMISTRY STUDENT

The following is an actual question given on a University of Washington chemistry mid term.

The answer by one student was so "profound" that the professor shared it with colleagues, via the Internet, which is, of course, why we now have the pleasure of enjoying it as well :

Bonus Question: Is Hell exothermic (gives off heat) or endothermic (absorbs heat)?

Most of the students wrote proofs of their beliefs using Boyle's Law (gas cools when it expands
and heats when it is compressed) or some variant.

One student, however, wrote the following:

First, we need to know how the mass of Hell is changing in time. So we need to know the rate at which souls are moving into Hell and the rate a t whic h they are leaving. I think that we can safely assume that once a soul gets to Hell, it will not leave. Therefore, no souls are leaving. As for how many souls are entering Hell, let's look at the different religions that exist in the world today.

Most of these religions state that if you are not a member of their religion, you will go to Hell.

Since there is more than one of these religions and since people do not belong to more than one
religion, we can project that all souls go to Hell. With birth and death rates as they are, we can expect the number of souls in Hell to increase exponentially.

Now, we look at the rate of change of the volume in Hell because Boyle's Law states that in order for the temperature and pressure in Hell to stay the same, the volume of Hell has to expand proportionately as souls are added.

This gives two possibilities:

1. If Hell is expanding at a slower rate than the rate at which souls enter Hell, then the temperature and pressure in Hell will increase until all Hell breaks loose.

2. If Hell is expanding at a rate faster than the increase of souls in Hell,then the temperature and pressure will drop until Hell freezes over.

So which is it?

If we accept the postulate given to me by Teresa during my Freshman year that, "It will be a cold day in Hell before I sleep with you," and take into account the fact that I slept with her last night, then number two must be true, and thus I am sure that Hell is exothermic and has already frozen over. The corollary of this theory is that since Hell has frozen over, it follows that it is not accepting any more souls and is therefore, extinct......leaving only Heaven, thereby proving the existence of a divine being which explains why, last night, Teresa kept shouting "Oh my God."< BR>

Long stretch
This has to be one of the longest stretches of time that I haven't blogged. Without going into much detail (believe it or not, I can be private sometimes) - things have been crazy. Makena is busy back at school. I've been trying to adjust to her new school and deciding if my expectations are unrealistic for kindegarten. Between all the b-days that Makena has been invited to - we've been trying to keep up at home the best we can. PJ has been super busy at work and helping out w/ my 'to do' list at home. Thankfully my parents have been assisting w/ Makena whenever they can. They are busy w/ home improvement projects now as the weather has begun to get cold.
